what are we going to be cooking?!!


Aw, you guys, I am so glad so many of you downloaded the Kitchen Coaching: Stocking Your Freezer in a Snap program and like it so much!! I poured so much time and energy into the program, and knew it was the best I could offer. Still, all of your emails today really make me smile. I hope the program brings as much happiness and relaxation into your home as it has brought into ours.


After talking such a big game, and launching this program last night, you're probably wondering what we're having for dinner? Tonight, we'll be enjoying a batch of the Butternut Squash-Black Bean Enchilada Casserole. And during my "bonus hour"? I enjoyed a glass of something delicious with my sister-in-law (who is visiting from Alaska) and my neighbor (who was one of my program test group) outside on the patio. If you're wondering what this "bonus hour" is that I am talking about, that's the hour+ of "me time" I gain on nights when I cook ahead. The time between when I open the freezer, turn the oven on, and we sit down to dinner. {And, yes, it is the best.}

OK, so in all seriousness, one question that a few of you have asked {which makes perfect sense, since I am asking you to whip my tried and true recipes up for your family... and you're probably on board with the idea, but wondering if your family might like them} is what recipes I share in the program.


Here's a list of the deliciousness that will be stocking your freezer after the four cook days spread over four weeks:
  • Baked Zucchini-Carrot Fritters (veg)
  • Cheesy Baked Taquitos (veg or chicken)
  • Creamy Pot Pies (chicken or root veggie)
  • Easy Comforting Lasagna (beef, sausage, turkey, or veg)
  • Layered Butternut Squash-Black Bean Enchilada Casserole (can do veg or add meat of choice)
  • Mediterranean Beef Stew
  • My Go-To Chili {That Always Gets Rave Reviews} (beef, turkey or veg)
  • Oven-Baked Meatballs (beef)
  • Power Green Pesto (veg)
  • Sloppy Joe's (beef, turkey or veg)
  • Super Fast Mexican Posole Stew (chicken or bean)
  • Tahini-Flax Crusted Chicken Parmesan (could also make veg with eggplant)



This list of recipes originally started out as a compilation of my family's favorites. Then I polled the 20 parents in my test group to see what their families liked best for dinner. I combined both lists and headed into the kitchen. After each recipe was tested and made as healthy as I could make it, my test group prepared the semi-finalists for their families and gave me their {honest} feedback. These are the winners. I couldn't be more excited by the variety and deliciousness. I hope that these freezer-friendly meals become favorites in your home too.
